Our meal began with boiled young beef wrapped in rice paper.

Served alongside slices of green banana, cucumber, star fruit and an abundant selection of herbs, the dish appeared almost understated.

The beef was exceptionally tender without becoming soft, its gentle sweetness enhanced by the slightly chewy skin.

Wrapped with aromatic herbs and dipped into a rich fermented anchovy sauce, every mouthful achieved a remarkable balance of freshness, savouriness and texture.

The restaurant owner, speaking between overseeing lunch service, attributed the success of bò tơ to consistency rather than culinary innovation.
