Creating new menus and changing the operation to create more interesting dining experiences for the guests were some things that Công brought to his diners.

Pan Seared Foie Gras

Ingredients:

- Foie gras slice: 40gr

- Crispy rice: 25gr

- Tamarind & red wine: 30gr

- Parmesan cheese espuma: 20gr

- Baby cress: 3gr

- Honey melon: 50gr

- Edible flower: 2gr

Preparation:

- Season foie gras liberally on all sides with salt and pepper. Heat a small skillet over high heat for at least three minutes.

- Spoon some tamarind and red wine purée onto individual serving plates and place one slice of foie gras on each.

- Top with baby cress and edible flower & Parmesan espuma.
