Different from traditional Vietnamese spring rolls made from minced pork, head chef Phạm Hoài Nam makes his from duck, making his a special treat for Vietnamese and foreigners alike.

Ingredients : serves 2
- 200g duck meat (main ingredient)
- 50g wood ears and mushroom
- 1 chicken egg
- 20g dried onion, sliced
- 20g fresh onion
- A little salt
- A little fish sauce
- Several garlic pieces
- A little pepper
- 20 pieces of rice paper
- 100g papaya
- 0.15 litres of vinegar
- 2 teaspoons of sugar
- 1 teaspoon of fish sauce/ 1/2 lime
- 1 chili

Method:
Mince the duck meat, then mix it with minced wood ears, mushroom, egg, onions, salt, fish sauce, garlic and pepper. Stir it well and then wrap it in rice paper before frying it in a pan with oil.
How to make dipping sauce: Cut the papaya into pieces 1cm by 1 cm, salt it for 10 minutes then put it with the already mixed vinegar, minced garlic, chili, sugar and fish sauce.
Arrange the nem vịt on a serving plate and surround it with salad and cucumber.
