Residents of Thống Nhất Village, Lập Thạch District in the northern province of Vĩnh Phúc are famous all over the country for a unique favourite food – the ngói soil. The soil, which is as white as chalk, is found after digging the land dozens of metres deep. The soil is washed, dried in sunlight, flavoured with smoke from fresh sim leaves.
