Mì Quảng (Quảng Nam style flat rice noodles) is a complex noodle soup recipe that has many layers of flavour. It is a perfect combination of soft rice noodles, chicken, and rich broth, served with a variety of fresh vegetables and a little fish sauce, roasted peanuts, and rice crackers. Let’s see how to make this five-star noodle soup.
Ingredients:
Whole chicken: 1 kg
Fresh coconut water: 1 litre
Dried onions: 4-5 bulbs
Garlic: 2 bulbs
Roasted peanuts
Quảng Nam flat rice noodles
Rice crackers
Cilantro, lettuce, basil, raw vegetables
Chili, peanut oil, chili powder
Salt, pepper, fish sauce, sugar, lime

Instructions:
Step 1: Heat the pan, fry the garlic until golden, then fry the chicken and chicken bones until hardened.
Step 2: Put the coconut water in the pot, simmer with the chicken for 15-20 minutes. When the chicken is tender, taste and begin seasoning, then turn off the heat. Add a little chili oil if you wish to enhance the colour of the broth.
Step 3: Prepare another pot of boiling water, poach the noodles for 2 minutes, then take out and drain.
Step 4: Prepare chili, a bowl of fish sauce, lime and raw vegetables on the side. Put the raw vegetables in the bowl, add the poached noodles to the top, fill with the broth and the chicken, top with some roasted peanuts, chopped onions, and cilantro.
Step 5: When serving, squeeze some lime juice, break the rice crackers, mix well and enjoy.
