Salmon sashimi with flamed-off coffee beans

This creation is among the special dishes presented on the ‘Coffee Cuisine’ menu that has been introduced globally by the Mövenpick brand which has been roasting its own premium coffees for more than 50 years. Every dish in the menu has an ingenious touch of coffee sparkle thanks to the expertise of Mövenpick’s Chief Barista, Kevin Mohler. At Mövenpick Hotel Hanoi, all the culinary creations have been conjured up by Executive Chef Nguyễn Ngọc Quyên.

Salmon sashimi with flamed-off coffee beans

Ingredients:

  • 600g salmon sashimi cut lengthwise
  • 2tbsp sesame oil, white
  • 2tbsp sesame oil, black
  • 10g of flowers, e.g. borage or violets
  • 80g Mövenpick Coffee Corazon Organic / Fairtrade Espresso Beans
  • 4 lemongrass stalks
  • 4 cl Sambuca Molinari
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 80g blackberries

Preparation:

- Salmon fillet cut into 20cm strips and sprinkle on the sesame oil and decorative flowers, lightly press in the flowers.

- Lay the strips over the lemongrass, which is placed over a shallow bowl containing coffee beans.

- To make the sauce, mix the soy sauce and sesame oil and pour over the blackberries.

- Cover the espresso beans with Sambuca and light.

- The sashimi can be cooked for as long as you like, depending on your preference.

- Extinguish the flames with a small fan or by covering the container.

Note:

For this dish, you will need equipment to hang the salmon strips over the lemongrass stalks before placing this over a container with coffee beans, so that the salmon can be smoked over the burning coffee beans. This is easy to do at home if you have a fondue set. Light the coffee beans in the fondue pot and hold the salmon strips over the flames using the fondue forks - like a camp fire!
