Salmon sashimi with flamed-off coffee beans |
Ingredients:
- 600g salmon sashimi cut lengthwise
- 2tbsp sesame oil, white
- 2tbsp sesame oil, black
- 10g of flowers, e.g. borage or violets
- 80g Mövenpick Coffee Corazon Organic / Fairtrade Espresso Beans
- 4 lemongrass stalks
- 4 cl Sambuca Molinari
- 4 tbsp soy sauce
- 2 tbsp sesame oil
- 80g blackberries
Preparation:
- Salmon fillet cut into 20cm strips and sprinkle on the sesame oil and decorative flowers, lightly press in the flowers.
- Lay the strips over the lemongrass, which is placed over a shallow bowl containing coffee beans.
- To make the sauce, mix the soy sauce and sesame oil and pour over the blackberries.
- Cover the espresso beans with Sambuca and light.
- The sashimi can be cooked for as long as you like, depending on your preference.
- Extinguish the flames with a small fan or by covering the container.
Note:
For this dish, you will need equipment to hang the salmon strips over the lemongrass stalks before placing this over a container with coffee beans, so that the salmon can be smoked over the burning coffee beans. This is easy to do at home if you have a fondue set. Light the coffee beans in the fondue pot and hold the salmon strips over the flames using the fondue forks - like a camp fire!
