Tuna Nicoise Salad is a classic salad originating from Nice, France. It can be made with seared or canned tuna and in different variants, depending on the chef’s creativity. However, certain ingredients cannot be missed to create the quintessential flavour of this Nicoise Salad: potatoes, beans, cherry tomatoes, and olives.

Ingredients: serves 1 person
- Fresh tuna: 80g
- Romaine lettuce: 150g
- Cress: 50g
- Chicken egg: 1
- Olives: 20g
- Potato: 30g
- French beans: 20g
- Cherry tomato: 20g
- Anchovy: 20g
- Olive oil: 20ml
- White vinegar: 20ml
- Sugar: 20g
- Yellow mustard: 10g
- Honey: 5g
- Garlic: 5g
- Salt: 5g
- Pepper: 5g

Method:
- Wash the romaine, cress, and cherry tomato and set aside to dry. When dry, slice the tomato into halves.
- Peel the skin and slice the potato into 2cm by 2cm cubes, and bake till brown.
- Trim and cut the French beans to 3cm in length, and boil with a pinch of salt until cooked and they still have a nice green colour.
- Boil the egg for 4 minutes for a slightly set yolk and set white. Cut the egg into 6 pieces.
- Marinate tuna with salt, pepper, and olive oil. Pan-sear the tuna at 70 degrees Celsius for 2 minutes. Slice the tuna into 1cm thick slices.
- Cut the olives into halves.
- For the dressing: Mix ground pepper, ground garlic, salt, honey, vinegar, mustard, and olive oil. Stir the mixture for 3 minutes.
Presentation:
- Put romaine, cress, and cherry tomatoes onto the plate. Top with olives, eggs, potato cubes, French beans, and tuna.
- Put the dressing mixture on the side.
