If you are looking for a new recipe to get out of familiar dishes, then Japanese bento is an easy-to-make and plentiful option to brighten up your lunchtime!

Ingredients: serves 3-4

  • 200g cooked rice
  • 100g cauliflower
  • 150g minced beef
  • 2 tbsp soy sauce 
  • 1 tbsp mirin
  • 1 tbsp cooking sake
  • 2 tbsp sugar
  • 1 or 2 large eggs (depends on your taste)
  • 1 tbsp mirin
  • 1 tsp sugar
  • Chef Yukari Ikeda

     

Method:

  • Cook the meat in a saucepan. Pour in a bit of vegetable oil before adding the mince, then mix the soy sauce, mirin, cooking sake and sugar together before adding it to the saucepan as well, mixing well on medium heat.
  • The meat is ready when all the liquid has evaporated, be careful not to overcook it as you don’t want the meat to be too dry.
  • Cut half of the boiled egg and put it in the box, where ever you like to decorate your bento.
  • Finally, boil or steam cauliflower, season with salt and pepper. Now you’ve prepared all of your ingredients it’s time to lay them out in the box.
  • Firstly, you will need to lay a bed of rice in one big left part of the box. Then, arrange beef meat, egg and cauliflower into the big right part. Add in some fruits, tomatoes and potatoes to your taste into the other parts to finish. Serve with hot miso soup.
