This week, sample one of the most special dishes by chef Đức, the all-fish menu!

Ingredients: serves 2

1.2kg cod loin

50g salmon roe

500g jerusalem artichoke

500g spinach

200g coffee beans

10g sea salt

400g butter

Method:

- Slice 120g of cod loin, steam with butter.

- Chop Jerusalem artichoke into 5 pieces.  

- Wash 4/5 parts with water, scrape the skin, steam until fully cooked, mince with butter.

- Mince the spinach, add salt and pepper to taste.

- Roast coffee beans, grind the beans and mix with sea salt.
