Fried tempura squid |
Preparation:
You should choose fresh squid, clean and cut out its inner parts, rub with salt for 5 minutes, then clean again and let cool.
Cut the squid’s beard and its body into slices of 5 by 10cm. Mix them with 1/3tsp salt and pepper, then stir well and leave for 15-20 minutes.
Make a batter for the squid:
Break open the eggs and use chopsticks to stir well while preparing a bowl of tempura flour. Take turns dipping a piece of squid into the egg and quickly cover with the tempura flour.
How to cook:
Turn on the oil-free fryer to 180 degrees Celsius 15 minutes before cooking. Put the squid inside the fryer and grill them for 15 minutes until they turn yellow.
During cooking, if the squid is not turning yellow or becoming dry, you can cover them with a tsp of cooking oil and continue grilling for 3-5 minutes more.
Completed dish:
You should decorate a plate with mint and put the grilled squid in the middle. The dish is yellow in colour and very tasty, with a crispy coating that will make your mouth water.
The dish is more enjoyable when dipped in chilli sauce, ketchup or sour and sweet fish sauce.
Guests can try the dish at Ngon Garden Restaurant at 70 Nguyễn Du, one of the most beautiful streets in Hà Nội. VNS
