Ayam Masak Merah (Braised Chicken with Sweet and Spicy Gravy)

Chicken is always a favourite in most Malaysian and Asian homes because it is easy to cook and pleases most palates. This week, chef Ahmad will bring you another popular dish made from chicken, the Ayam Masak Merah.


  • 1kg chicken, cut into pieces
  • 100g cooking oil

Item 1:

  • 50g dried chilli
  • 20g garlic

Item 2:

  • 50g small onion
  • 50g red chilli
  • 100g tomato
  • 20g fresh turmeric
  • 50g lemon grass
  • 20g garlic
  • 50g fresh ginger

Item 3

  • 100g big onion
  • 10g screw pine
  • 50g lemon grass
  • 3 cinnamon stick
  • 3 star anise
  • 100g tomato puree
  • Salt, sugar, pepper and white powder to taste.


  • Marinate the chicken with salt, ginger, garlic paste, turmeric and chilli powder. Then fry it and set aside.
  • Blend item 1 with item 2 into a paste.
  • Heat a wok and pour some oil and stir item 3, excluding the tomato puree.
  • Next pour in the blended items and add enough water.
  • Let it boil for a while then add some tomato puree.
  • Add salt and sugar according to taste.
  • Add the fried chicken and mix well with the gravy and let it cook through with the flavours.
  • Finally, remove when the gravy chickens to your taste and serve with white rice or tomato rice.
