Drunken Chicken

A simple dish that makes a delicious addition to any dining table or party spread, Drunken Chicken (Ga Say) by chef Nguyen Van Tuan (May Man Chinese Cuisine) is simmered to perfection with a hint of cinnamon, star anise and wine. Flavourful and delicious, this dish symbolizes prosperity, family togetherness, joy and unity.

Ingredients: serves 3

  • ½ chicken
  • 100g dry onion
  • 5 star anise pods
  • 10 bay leaves
  • 1 cinnamon stick
  • 500ml water
  • 100g chicken powder
  • 200g sugar
  • 70g salt
  • 300g rice wine


  • Bring a large pot of water to boil.
  • Simmer dry onion, star anise, bay leaves and cinnamon for 30 minutes. Add chicken powder, sugar, salt and wine. Lower heat and place chicken in the mixture. Simmer for 3 hours.
  • Chop the chicken and place on dish. Add wine.
