Pineapple Soup with Coriander Syrup, Ginger and Banana Granite

Welcome summer! Do you have any favourites in mind for this season's menu? If not, try pineapple soup with coriander syrup. With a wonderful mixture of fruit and flavours, this dish will make a refreshing treat for the hot days ahead.

Ingredients: serves 4

For the ginger and banana granite:

  • 50ml lime juice and zest
  • 200ml water 100g sugar
  • 200g banana
  • 10g chopped ginger


For the coriander syrup:
  • 1lt water
  • 250g sugar
  • ½ coriander bunch
  • ½ vanilla pod
  • 4 small pineapples


For the ginger and banana granite:

  • Boil the sugar and water, leave to cool.
  • Add the lemon juice and zest.
  • Mix with the banana and ginger, and blend until smooth
  • Pour into a deep tray and keep in the freezer.

To make coriander syrup:

  • Boil the water and sugar, leave to cool.
  • When cold, mix with the fresh coriander.
  • Cut the pineapple in thin slices, put in a deep plate. Pour the syrup on top.
  • Remove the granite from the freezer, mix with a fork and form a quenelle with two spoons on top of the coriander and pineapple.
