Cooked with three very different eggs — salt egg, century egg and chicken egg — the flavour of spinach is brought to a whole new level, enhancing it amidst the saltiness and creaminess of the eggs, Luk says.
Ingredient: serves 2
- 300g spinach
- 40g salted eggs
- 40g century egg
- one chicken egg
- 200g pork stock
- Cut the cooked salted egg into cubes, and mix well with a little olive oil and salt.
- Stir fry spinach in cooking oil, add bone stock and bring to boil.
- Add egg-yolk, century eggs and salted eggs on top of the stir-fried spinach.
