Herb Crusted Lamb Loin, Ratatouille, Garlic Chips and Pesto

This December, you are invited to taste one of the finest and most sophisticated dishes in the world: herb crusted lamb loin. The flavour is brought to you by Chef Olivier Genique.

Ingredients: (serves 2)

  • 800g lamb loin
  • Garlic chips to taste 1 clove garlic

For pesto:

  • 1 bunch of basil
  • 50g pine nuts
  • 50g parmesan
  • 100g olive oil

For ratatouille:

  • 150g onion
  • 50g red bell pepper
  • 50g yellow bell pepper
  • 150g eggplant
  • 50g red bell pepper
  • 150g zucchini 2 tomatoes
  • 30g chopped garlic
  • Thyme to taste 100g olive oil

For herb crust:

  • 360g white bread
  • 90g hazelnut powder
  • 300g butter
  • 60g garlic
  • 150g flat parsley

Method:

For the ratatouille:

  • Dice all vegetables and pan fry one by one in olive oil with thyme. Simmer together for 20 minutes.
  • For the herb crust:
  • Blend all the ingredients. Roll on wax paper and set aside in a cold place.

For the garlic chips:

  • Peel garlic and slice finely, then fry.
  • For the pesto:
  • Blend all ingredients together and set aside in a cold place.

For the lamb loin:

  • Brown on a stove. Finish in the oven with the herb crust on top at 180C for 5 minutes.
