Braised Rooster in Red Wine

When the first breeze of the chilly season reaches the capital, sit back, unwind and reward yourself with a hot braised rooster and fragrant red wine. Come on! What are you waiting for?

Ingredients: serves 2

  • 1 small rooster
  • 200g onion
  • 200g carrots
  • 1 bouquet garni
  • 1.5l red wine
  • 50g tomato paste
  • 50g flour
  • 6g black pepper
  • 1 clove garlic
  • 100g shallots
  • 20g butter õ
  • 200g shallots
  • 150g smoked bacon
  • 0.30l chicken stock
  • 50g butter
  • 50g flat parsley
  • 4 big potatoes

Method:

  • Cut rooster in 8 pieces. Dice garniture.
  • Marinate with red wine for at least one night. Remove from wine and colour each piece on every side. Boil red wine and colour garniture, then add tomato paste and flour and pour wine on garniture.
  • Add rooster, bouquet garni and spices. Cook for 3 hours. Strain and reduce sauce.
  • Glaze baby onions or shallots. Pan fry mushrooms and bacon and add into the sauce. Finally, add chopped parsley and boiled potato.
