Braised Pig's Trotter in Soy Sauce

Pig trotter is lauded not only for its subtle deliciousness but also for its health benefits. Why not try this new recipe of chef Mak King Sang? Let's enjoy the tender trotters combined with delightful flavours of herbs and spices.

Ingredients: serves 4

  • 1kg pig trotter
  • 1 pcs galangal
  • 5 pcs lemongrass
  • 1 stick cinnamon
  • 10 star anise
  • 100g dried onion
  • 3 garlic
  • 200g coriander
  • 5 bay leaf
  • 200ml white soy sauce
  • 3 tsp dark soy sauce
  • 3 tsp oyster sauce
  • 1 tsp chicken powder
  • 50g sugar 1l water
  • 5 tsp seasoning powder
  • 5pcs Amomum Tsaoko (black cardamom)

Method:

  • Clean and cut pig trotters into pieces. Dip the trotters into hot water to make sure the trotters are properly done.
  • Add all the ingredients and sauce into boiling water. Bring to boil and put in pig trotters. _ Slow braise in about 1 hour 30 minutes. Add sauce to taste.
