Poached vegetable with three kinds of egg

Cooked with three very different eggs — salt egg, century egg and chicken egg — the flavour of spinach is brought to a whole new level, enhancing it amidst the saltiness and creaminess of the eggs, Luk says.

Ingredient: serves 2

  • 300g spinach
  • 40g salted eggs
  • 40g century egg
  • one chicken egg
  • 200g pork stock

 

 
Method:
  • Cut the cooked salted egg into cubes, and mix well with a little olive oil and salt.
  • Stir fry spinach in cooking oil, add bone stock and bring to boil.
  • Add egg-yolk, century eggs and salted eggs on top of the stir-fried spinach.
