‘Molecular Gastronomy' arrives in the capital

HA NOI (VNS)— French Grill restaurant inside the JW Marriott Hotel Hanoi will host its third "Molecular Night" this evening, giving diners the opportunity to taste foods and drinks that are paired according to the principles of molecular gastronomy.

The unique dining concept has appeared elsewhere in the world, but it is new to Viet Nam. A limited number of 12 guests will have the opportunity to sample eight dishes and eight cocktails.

Two other Molecular Nights were held earlier this month.

The concept of "Molecular Night" was brought to Ha Noi by Raphael Szurek, a young and talented chef at French Grill, and Richard McDonough, an expert in mixing drinks.

Diners can enjoy not only the unique flavours each dish offers, but also impressive and skillful performances involved in mixing the cocktails.

Since molecular gastronomy was first explored in the 1970s and 1980s, it has given many diners and culinary enthusiasts unique and new experiences. Through physical and chemical reactions, food is transformed to create new textures and flavours in impressive dishes. — VNS
